Even during her training, it was clear how seriously Maria took her profession. Her successes in competitions at school, state and national level, as well as her participation in the international professional competition in Budapest, were no coincidence, but the result of hard work, curiosity and craftsmanship. After completing her training in July 2013, she spent a year as an apprentice at the Krone. She then made a conscious decision to further her development: a three-year advanced training course in business administration for nutrition and supply management, a management position as deputy manager in an Allgäu adventure restaurant – and finally, a return to the Krone in January 2019.
Step by step into responsibility
From sous chef in January 2024 to head chef today: the transition was seamless. Maria knows the restaurant, the processes, the team – and the team knows her. That's exactly what makes her start so smooth and so strong at the same time. Many dishes already bear her signature. Maria thinks creatively, but never loudly. She lets herself be inspired, tries things out, and discards them again. She looks at trends – and only implements what really suits the Krone. This is particularly evident in her bowl ideas, her salad dressings and the way she brings simple dishes to the table with high quality. Maria herself says how important a well-coordinated kitchen team is to her. For her, good food means not only quality, but also timing. Every guest should get the right dish – at the same time as everyone else at the table. This is a daily challenge that only works with trust and cooperation.
Even in stressful moments, she remains calm. For her, ‘strength lies in calmness’ is not just a saying, but a way of working. This is one reason why she can rely on her team – and the team can rely on her.
Human, clear, down-to-earth
Maria gets on very well with our boss Helmut, but also contributes her own ideas and advocates change. This combination of respect, clarity and attitude is appreciated not only by us, but also by the entire kitchen team.
Outside of work, she plays in the Eckarts band – and of course she gets time off whenever possible. She is currently building her own house. The most important thing in it? A good kitchen. Anyone who knows Maria knows that this is a perfect fit!
Two quick insights to finish
Maria's favourite dish from the Krone:
Wild game ravioli on carrot purée with red wine jus and king oyster mushrooms.
Maria and the Krone in three words:
‘Familiar. Versatile. Delicious.’
